This is the perfect dinner to make if you want something fast that also tastes exceptional.

It is delicious. Seriously delicious. Like restaurant delicious. The first time I made this I thought to myself “I would buy this at a restaurant.”

And bonus it is incredibly easy to make. So, you can impress without being stressed.

Pictured here with gluten free penne but use whatever kind of penne you prefer. I also used vegan Beyond Meat sausages but if you’re not vegan shrimp or scallops would be a great substitute with a lighter taste.

This recipe is also delicious with mushrooms and can easily be adapted to best serve your taste buds.

Get fancy and serve this with some cheese, vegan or not. And a fun side salad. It also pairs beautifully with a nice red wine.

Vegan Penne alla Vodka Recipe

- 1 medium white onion
- 5 cloves of garlic
- 1 cup of chopped spinach
- 1/3 cup of sun-dried tomatoes
- 2 tablespoons of Italian spice mix
- 1 teaspoon paprika
- 1 tablespoon of red chilli flakes (or less depending on your spice tolerance)
- 1 package of vegan sausage (4 vegan sausages cut into slices, I used the Beyond Meat Italian Sausages)
- 1 can of tomato paste
- 1/4 cup vodka
- 1/4 cup balsamic vinegar
- 1 can of full fat coconut milk

- Pour in the coconut milk and lemon juice. Bring that to a simmer.
- Then turn it to low and add the cooked pasta.
- Mix it all together and enjoy!
