As a Celiac I have always been jealous when my mom makes her Soda Bread but this bread solved my problems! Now I have my own and so will you.

Herby Irish Soda Bread Recipe
Ingredients
- 1 & 1/3 cup butter milk (I used almond milk, but oat milk would also work. Add 1 tablespoon white vinegar or lemon juice to the milk and let it sit to “thicken”)
- 1 cup oat flour
- 1 cup white rice flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 tablespoon chopped flax seeds or sesame seeds
- ½ teaspoon garlic powder
- ½ teaspoon Italian spice mix
- ½ teaspoon fennel seeds
- ¼ teaspoon cayenne pepper
- 2 tablespoons olive oil
Instructions
- Pre-heat your oven to 425F.
- Make the butter milk and let it sit for about 10 minutes.
- Mix all the other ingredients together except use only 1 of the tablespoons of olive oil.
- Then add the butter milk to this mixture once it has thickened. Stir until just combined.
- Pour the mixture into a greased loaf pan and then pour the remaining 1 tablespoon of olive oil over top.
- Cook the loaf at at 425F for 17 minutes. Then lower your oven temperature to 400F and cook for another 10 minutes or until it is very slightly browned on top. Enjoy!
